Poker Night Nibbles : Cheesy Potato Skins

Hello there foodies! It’s been a while! Haven’t had the chance to blog in a while, SA’s gone on holiday leaving me to fend the fort for myself and I was a tiny bit under the weather. Cycle Roanu hit this weekend, not that you can really tell from Dhaka minus the thunderstorms but our thoughts and prayers go out to the good people on the coast whose lives and livelihoods have been affected. There was also a national holiday during the week, hope you guys enjoyed all the halwa! Anyways, we hosted Poker Night recently (I lost all my money and SA made back his and a little more). My plan was to distract everyone with the delicious snacks and take everybody’s money but it was “curses! Foiled again” for me. But the snacks really were incredible.

If there was any kind of food I would marry, it would definitely be cheese. And then I would cheat on the cheese with potatoes. Sigh just thinking about potatoes makes me feel all funny. We made Cheesy Potato Skins…and really, I almost cannot think of a snack more perfect. The crisp on the skin, the softness of the potatoes, the gooeyness of the cheese, the tartness of the chives topped with the crunch of the bacon. Can you ask for anything more from one dish? You’d be hard pressed to find something more satisfying.

First, let’s grab some potatoes. Remember these fellas were under the ground and we are keeping the skins on so it is absolutely imperative that you wash them THOROUGHLY, unless you want to end up with dirt in your mouth. Once you’ve washed them well, pierce them a couple of times with a fork. Stick it right in! Feels oddly satisfying, don’t it? I’d say pierce them 3 times.

We initially tried to broil the potatoes according to the original recipe, but it was a waste of 50 minutes so we just boiled them instead and they were done in 15-20 minutes. Take them out of the water and put them somewhere to cool. Now that you can touch them and you won’t drop that hot potato, slice them lengthwise, and scoop the flesh out leaving about a quarter of the flesh still on the skin. Next, get out some slightly warmed butter and some salt and pepper. I don’t know what it is about potatoes but I found every step of this recipe really fun to make. Brush the butter on the insides of the potatoes and season with salt and pepper. Now turn them upside down and do the same thing on the skin side.

Now lay them skin side up on a baking dish and put them in the oven and broil until the butter starts to foam and skin gets crisp, it took us 6 minutes but will differ from oven to oven. Take them out and fill up each skin evenly with grated cheddar and some crumbled bacon on top (you should be able to get beef bacon at Lavender and other places). Place it back in the oven and broil until the cheese is all bubbly, took us another 6 minutes.

Almost there…

Take them out of the oven, top each skin with a healthy dollop of sour cream and garnish with chopped chives. With these beauts, I say everyone is a winner! Next time you’re racking your brains for a great nibble to serve on a game night – Cheesy Potato Skins are the way to go!

Ingredients :

8 potatoes (thoroughly scrubbed and dried)
2 tbsp butter (slightly melted)
Salt and pepper
2 cups shredded Cheddar cheese
1 cup sour cream
12 rashers of bacon (crumbled)
2 tbsp chopped chives
