Pesto Chicken With Fresh Linguine

So, here’s the thing. I love to eat, and I also enjoy making my own food, but the thought of making elaborate meals is very daunting to me. What can I say? I’m a capricious gal, who suddenly decides what she wants to eat (much to my mother’s chagrin) and prefer recipes that require few ingredients and maximum 15 minutes to prepare. SA loves doing the whole shebang and thank god for that because I get to eat his food, but me, I like the #15minutemeals (yeah that deserved a hashtag). So, without further adieu, here is how you make Pesto Chicken with Fresh Linguine.

There is only a cast of four characters featured in this recipe – pasta (we used fresh linguini), grilled chicken breasts, pesto sauce (recipe here), parsley…and ermmm, that’s it! Of course you can use store bought pesto sauce, but to my great surprise the other day I discovered that Pesto is incredibly painless to prepare. Even if there’s no basil, Italian or otherwise, available, you can use any other green as well.

I’m assuming you know enough to already have seasoned your boneless chicken breasts by now with salt and pepper. Grill the boneless breasts for 5-6 minutes a side in some olive oil. Chop the chicken into bite sized chunks.

We used fresh pasta for this recipe… You’d be surprised how easy it is to make. The  difference between this linguine and the fresh ravioli recipe from last week is that we cut the pasta sheets into strips instead of dolloping them with filling and making raviolis. You should then sprinkle the pasta with a little flour to prevent sticking and dry it under a fan for a few hours before storing, but in this case you can directly throw it in boiling water. Since the pasta is fresh, you don’t need to boil it that long at all — 2-3 minutes only. Drain it and rinse with cold water to prevent it from sticking.

Mix the chicken with the pasta and smother them both with the gooey green goodness that is the pesto sauce. Be generous with the pesto and finish the dish off with a garnish fresh parsley and there you go! A meal under 15 minutes (assuming you are smart like us and have the pesto and pasta ready in the fridge). Hooray! Now pat yourself on the back, and chomp down on your no-fuss, fast-fix dinner.



  • 2 chicken breasts, boneless
  • Fresh linguine, 4 cups
  • Parsley, chopped
  • Salt & pepper, to taste
  • Pesto sauce, 1/2 cup
